The Ultimate Oreo Brownies
Ingredients
Crust
- 220g Oreos
- 17g cocoa butter (melted)
Brownies
- 200g dark chocolate
- 1/2 cup melted coconut oil
- 1 cup dairy free milk
- 1 tsp vanilla extract
- 1 tsp instant coffee powder dissolved in 2 tbsp boiling water
- 3/4 cup brown sugar
- 1 cup plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 2 heaped tsp cocoa powder
- pinch of salt
- 1 packet Oreos
method
- Preheat the oven to 180°C and grease a 20cm square baking tray and line with baking paper making sure the paper hangs over the sides of the tin.
- To make the crust, thoroughly crush the cookies by placing them in a zip lock bag and bashing them with a rolling pin or place the cookies in a food processor and blitz till fine. Once fine and crumbly, add the cocoa butter and incorporate until the crumbs resemble wet sand. Press the crumbs into the tray with your hands or the back of a spoon. Bake for 10min and leave to cool while you prep the batter.
- To make the brownies melt the chocolate with the oil in a large mixing bowl by placing it in the microwave and stirring every 30 seconds until the chocolate is fully melted. Once melted mix in the milk, sugar, vanilla extract and coffee. Then sift in the flour,cocoa powder, baking powder and salt and fold into the mixture. Then take half of the packet of Oreos and break them into smaller pieces and fold them into the batter.
- Place the batter into the tray take the other half of the Oreos and break them into pieces and place on top. Bake for about 20 to 25 minutes until when a knife is pierced into the brownies the knife comes out a little dirty with crumbs sticking to it.
- Leave to cool completely before removing from the tray and slicing.
